Oat Crunch Cookies


If you have read about my baking journey, you might have noticed that I only started baking last year. The reason for my sudden urge to bake was because I was surrounded by people who baked. I would come to work and get to eat freshly baked bread/cakes/cookies etc. So much love!

So I started baking and things escalated from there…

This Cereal Oat Crunch Cookie IS THE BEST and it’s as easy as it can get!

My colleague, Yong makes the best oat crunch cookies, bread, and blondies and did I mention, HER CHIFFON CAKE IS TO PERFECTION! One morning, a year ago, she brought a box of Oat Crunch Cookies to work. I took a bite and immediately looked up to her, gave her the “kitty eyes” and with my sweetest smile, asked her for the recipe. She wrote it out for me and I have been baking this every now and then ever since. Tried it with Cereal of different flavours and you will achieve different results. I like how Yong modified the recipe by using plain and self-rising flour so that she does not need to use baking powder.

I learnt more than just baking cookies from Yong, I learnt generosity. When I asked her if I could share the recipe, she replied “Recipes are meant to be shared!”

This recipe uses cup measurement. It is the easiest way ever! Don’t bother converting it to grams, all you need to measure using the scale would be the butter. The rest just use your cup measurement to scoop the flour and level it with a butter knife.

I got this Measuring cup (spoon) from a shop in Perth when I was holidaying there. It really is a great kitchen tool to have, easy for children to use too!

For the cereal, I use the “Post brand” finding those with cluster cereal in it. Be adventurous and try making these delicious cookies with the different flavours.

For the oats, I use rolled oats. ( Don’t get those quick cooking/porridge oats – I have not tried it, but I’m quite sure it would not work. You might get porridge cookies? )





– 170g butter

– 1 cup sugar

– 1 egg yolk

– 1 cup self raising flour

– 1/2 cup plain flour

– 1/2 cup raw oatmeal

– 1/2 cup cluster cereals ( e.g. Post brand – honey crunch/ almond crunch etc.)


Preheat oven to 180degC
1. Cream butter and sugar till light and fluffy

2. Add egg yolk and mix till incorporated

3. Mix in flour, oatmeal & cereals

4. Put in fridge for 20 mins

5. Using a teaspoon or mini ice-cream scoop, drop the cookie dough onto a parchment paper leaving an inch in between each cookie dough

6. Bake for 10-12 mins or until golden brown

7. Let it cool before removing the cookie, store in an airtight container.
